Curried Yellow Lentil Soup with Coconut Milk
Serves 4
Ingredients: • 1 tablespoon olive oil • 1 medium-size yellow onion, chopped • 1 carrot, chopped • 1 celery stalk, chopped • 3 garlic cloves, chopped • 1 cup dried yellow lentils • 1 (14.5-ounce) can diced tomatoes, undrained • 1½ tablespoons curry powder • 1 teaspoon ground cumin • 1 teaspoon ground turmeric • 1 teaspoon salt • ¼ teaspoon freshly ground black pepper • 4 cups vegetable stock • 1 (13.5-ounce) can full-fat coconut milk
Instructions:
For the church pot luck, I doubled the recipe, and added all the ingredients except the coconut milk in a crockpot on low overnight. Then in the morning, I added the coconut milk and used an immersion blender to meld the ingredients. Then enjoy!
